Article Summary
This article covers a recent study conducted by UC San Diego that reveals a significant finding: adopting a plant-based diet can effectively reduce inflammation and slow the process of biological aging, compared to a meat-rich diet. This remarkable discovery is associated with the activation of DNA methylation pathways, which are intricately linked to immune function, metabolism, and cellular stress. These findings provide compelling evidence suggesting that dietary choices can have a profound impact on gene activity and contribute to long-term health outcomes.
Can a plant-based diet improve inflammation, biological aging?
If you would like to slow biological aging and improve inflammation, UC San Diego researchers think they may have found an answer: a plant-based diet. Incredibly, these results were seen in only one month. Their randomized trial found that DNA methylation patterns linked to inflammation, cell growth, and metabolism were altered, which influenced immune function and cancer-related pathways. These findings suggest that dietary choices have a profound impact on molecular processes — including those involved with aging and long-term health. What's more, this exciting research is helping scientists understand how food influences the epigenome — a layer of structural features on your DNA that control which genes are turned on or off, without changing the DNA itself.
The Science Behind the Findings: Meat-Rich vs Plant-Based Diets
For the study, each of the participants was given the same standardized diet for a week.[ 1 ]1. Lizelda Lopez. "One Month on a Vegan Diet Shifts Epigenetic Patterns Associated with Aging and Inflammation." UC San Diego Today, August 4, 2026.[ 2 ]2. Karbacher, L et al. "A Vegan Diet Epigenetically Modulates Inflammatory Pathways and Biological Aging: Genome-Wide DNA Methylation Analysis of a One-Month Isocaloric Vegan Versus Meat-Rich Dietary Intervention." MedComm 7,8 e70899. 3 Aug. 2026. Then, they were randomly assigned to either a plant-based diet or a meat-rich diet for one month. Both diets were designed to have the same number of calories so that the findings were based on the actual diet composition rather than weight loss.
Next, the team analyzed over 800,000 methylation sites across the genome before and after the dietary intervention. The researchers found several changes in the plant-based group involving pathways associated with metabolism, cell growth, immune function, DNA repair, insulin signaling, and cellular responses to stress.[ 3 ]3. Peter Moraes-Brown, fact checked by Jill Sendai-Schulman, PhD. "Just 4 weeks on a vegan diet linked to changes in inflammation, aging." Medical News Today, August 19, 2026.
Biological aging also slowed in the plant-based group, based on two "epigenetic clocks". These are mathematical models structured on DNA methylation patterns that estimate a person's biological age, not chronological age. A third clock (classified as “Blood & Skin”) was optimized to predict chronological age instead of health outcomes, which highlighted the fact that epigenetic clocks measure different aspects of aging.
The researchers also established that a plant-based diet reduced the activity of genes within promoter methylation pathways, suggesting that it may curb several cancer-related and cell growth processes. Additionally, there was increased activity in pathways associated with DNA repair, insulin signaling, and cellular stress responses.

Can a plant-based diet reverse aging and prevent cancer?
While the results are promising, they do not prove that a plant-based diet can reverse aging or prevent cancer. However, the findings do provide fresh insight into how your diet can rapidly influence biological processes that are linked to inflammation and age-related disease.
“Our genes are not our destiny,” said Jerome Mertens, PhD, associate professor of neurosciences at UC San Diego School of Medicine and co-senior author of the study. “The remarkable finding isn’t simply that one diet outperformed another. It’s that the epigenome responded measurably in just four weeks, showing that our biology is far more dynamic — and responsive to everyday choices — than we often assume.”[ 1 ]1. Lizelda Lopez. "One Month on a Vegan Diet Shifts Epigenetic Patterns Associated with Aging and Inflammation." UC San Diego Today, August 4, 2026.
The research team is quick to point out that the study’s duration was only one month and involved 48 healthy adults, so it was relatively small in scale. Larger, longer-term studies are required to firmly establish if these molecular changes demonstrate significant reductions in disease risk.

FAQ
Meat-rich vs plant-based — which is best for health?
According to a 2026 UC San Diego study published in the journal MedComm, a plant-based diet improved inflammation and biological aging, DNA repair, immune function, and cancer-related pathways.
What is the difference between biological and chronological aging?
Biological age uses mathematical models structured on DNA methylation patterns to estimate the age of your body on a cellular and molecular level, while chronological age is simply the number of years you have been alive. Biological aging can help to predict your risk of age-related diseases.
Getting started with a plant-based diet, where to begin?
If you would like to adopt a plant-based diet, start slowly by switching out two meat-rich meals per week. Focus on whole foods: beans, vegetables, whole grains, nuts and seeds, fruits.
Can a plant-based diet reverse aging and prevent cancer?
While the UC San Diego study results are promising, they do not prove that a plant-based diet can reverse aging or prevent cancer. However, the findings do provide fresh insight into how your diet can rapidly influence biological processes that are linked to inflammation and age-related disease.
